What type of rice is best for rice pudding? Do you have a favorite recipe?

I randomly decided to pick up some Kozy Shack rice pudding last week, hadn't had it in many years.It was really good! I started to think about making some, but there are just so many options for it. When I went to pick up more at the store yesterday, they only had the "no sugar added" kind.

I thought that odd, but picked this up expecting it to not be as sweet. That is what I get for not taking the time to read ingredients. It had sucralose in it!

Bleh! Now I am seriously thinking about making some. What kind of rice is best?

Short grain rice For rice puddings you want short grain rice. The texture of rice is determined by the mixture of amylose and amylopectin. Long-grain rice primarily has amylose, which is stiff when cool (but helps keep rice nice and fluffy when cooked).

Short-grain rice has amylopectin, which stays soft when cool. That makes it best for rice pudding, should be creamy. That's also why short-grain rice is used in risotto, which is supposed to be creamy rather than fluffy.As for a recipe, any basic recipe will do: cook up the rice with milk, add an egg and sugar, then flavor with vanilla.

Here's a basic recipe: 2 1/2 cups of whole milk 1/3 cup of uncooked short grain white rice 1/8 teaspoon salt 1 egg 1/4 cup sugar 1 teaspoon of pure vanilla extract 1 In a medium heavy bottomed saucepan, combine milk, rice and salt and bring to a boil over high heat. Reduce heat to low and simmer until the rice is tender, about 20 minutes. Stir frequently to prevent the rice from sticking to the bottom of the pan.

Add a half cup of the rice mixture - a tablespoon at a time - beating to incorporate.3 Add egg mixture back into the saucepan of rice and milk and stir, on low heat, for 10 minutes or so, until thickened.Be careful not to have the mixture come to a boil at this point. Stir in the vanilla.(By mixing the egg and sugar together before adding the hot rice/milk, it helps keep the egg from curdling.

You further reduce curdling by "tempering" the egg with a bit of the hot mixture before adding the rest.) From here, you can add all sorts of other flavorings: cinnamon, allspice, nutmeg, raisins, brown sugar (instead of white), molasses, etc. The recipe is pretty forgiving, and you can mess with it in a variety of ways.

Arborio Rice is the rice I prefer it is a very creamy rice when prepared correctly and has an oval shape. I use Arborio rice to make my rice pudding and my Risotto too! Enjoy!

Arborio Rice Pudding Ingredients 2 quarts milk 2 tablespoons butter 1 cups sugar 1/2 teaspoon ground cinnamon, plus more for dusting 1 vanilla bean, split and seeds scraped 1 cup Arborio rice 1 1/2 cups water 1 orange, zested, 1 teaspoon plus more for garnish Pinch kosher salt Directions Take a large saucepan and add milk, butter, sugar, cinnamon, and vanilla bean and seeds. Cook the rice in boiling water until al dente. Once the water has evaporated fold in milk mixture.

Reduce heat to medium and cook for 10 minutes stirring regularly until rice is tender. Add the orange zest and pinch of salt. Stir well and remove from heat.

I love rice pudding or Milchreis as it is called here in Germany! Here in Germany where I live they sell packaged ones in the dry goods section, they have cinnamon, vanilla, and classic. All my needs to do is add milk and let it cook, stirring of course.It comes out perfect every time, I make sure that we have at least 10 packages on hand well I try to anyway.

I find rice pudding great on cold winter days and late night weekends while watching a movie. This can be ordered through Amazon though I must say it's pretty expensive compare to buying from the German stores down town! I am not peddling Amazon here, I just checked to see if what we buy locally can be purchased on line and it can.

If you wanted to just rip open a package and add milk this is tasty and least work involved method..;) I would say using a long white rice is what your looking for, you want the pudding to be chewy! My wifes recipe when going from scratch: 2 1/2 cups whole milk 1/3 cup long white rice 1/8 tsp salt 1/4 cup sugar 1 tsp vanilla extract 1/4 tsp cinnamon 1/4 cup raisins This will give you enough for four, or in my case just one..;) My wife will add brown suger as a topping with a little extra cinnamon (I love cinnamon), sometimes she will put chopped walnuts on top as well!.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
