Okay, good tank size for 2 fantail goldfish. I would suggest you get fantail goldfish also known as fancy goldfish. They come in lots of colors and are so much fun to watch.
You can get all gold ones, black and white ones, calico ones, orange and white ones, more of a grayish colored ones, etc. Cold water fish are much easier to take care of, so great to start with. Now, I wouldn't suggest you add other fish with these guys. It is unbelievable how much waste these guys produce and it will be much easier to handle it when they are alone.
Even if they are babies, it is still insane! Plus, as the goldfish get bigger, they will go after the smaller fish, so you would be wasting money. Black Moors look great, but they are the most sensitive goldfish and will easily die or get sick, so maybe try fantail goldfish first?
The most common problem with goldfish is getting swim bladder, to prevent that, feed the goldfish cooked peas out of the shell a couple times a week. If you notice swim bladder, when they float and can't stay down or sink and can't swim up, feed them only cooked peas without the shell for 3 or 4 days. As for growing, it isn't as slow as one would think.
The fish can be fully grown in 2-3 years, depending how well you take care of them. Though people say that aren't very smart. My goldfish recognize me and will only come to the when it is me, rather than any guest.
Oh, don't be fooled by these fish, they are the fatties of most fish, they will seem like they are hungry two seconds after you feed them. Be sure not to over feed, it can contribute to getting swim bladder. Make sure you get a filter a good bit bigger than your tank, it will help to take care of the ammonia.
I would suggest a tank rated for a 75G tank for your 40G. It really does help a lot. As long as you keep an eye on the water parameters and do your water changes every week, you will be fine!

Goldifish growth time depends on the size of the tank, the water change and the quality of the water. In your tank it may take them 8-9 years to grow to their full size. I would not recommend you black moors because at least from my expirience they can easily be stressed and therefore die.
Something like calico would suit you more. They have great colors like the shubunkin but are slow swimmers.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
