Well, I tried it and it didn't turn out too well. The seasonings didn't stay on. Not sure what I did wrong.

It doesn't form a thick breading, like southern fried chikkin. If it tasted good, you probably did it right.
Separate the breast-side skin, stuff a whole bay leaf under each section, invert the chicken, roast @ 350 for an hour or so. DO NOT OVERCOOK THE BREAST MEAT. That's why it's upside down, to keep it moist.
CHICKEN PICCATA: This is one of our favorites - we sort of make it our own way now, but it is simple and good enough for company. Sometimes I double the sauce if we are having pasta. Just make sure the breasts are very thin.

Mix 1 tablespoon butter and 1 1/2 tablespoons flour in small bowl until smooth. Place additional flour in shallow baking dish. Dip chicken into flour to coat; shake off excess.
Heat 1 tablespoon oil in each of 2 heavy large skillets. Add 2 chicken breasts to each skillet and cook until golden and cooked through, about 3 minutes per side. Transfer chicken to platter; tent with foil to keep warm.
Bring wine, lemon juice and broth to boil in 1 skillet over medium-high heat. Whisk in butter-flour mixture and boil until sauce thickens slightly, about 2 minutes. Stir in capers, parsley and remaining 2 tablespoons butter.
Season sauce to taste with salt and pepper. Pour sauce over chicken and serve.
Sounds delicious. I wonder if it takes a long time, though. I might try it anyway.

It really is quick to make. Sounds more complicated than it is. To simplify, just put the flour in a baggie and lightly coat chicken.
You really don't need the butter.

Boneless Chicken Thighs (marinated) on grill or in broilerMarinate chicken thighs with Olive oil, vineger, garlic, a little rosemary. Put all in a plastic bag and leave for an hour or longer. Grill or broil until golden.
You can also use the same marinade and combine it with onions, peppers, mushrooms,chicken, etc an put on skewers and grill for about 25 minutes.

Season chicken thighs with lemon pepper seasoning. Brown the chicken in a skillet (you don't even need oil the chicken skin will release fat)add some fresh mushrooms, juice of one lemon and two tablespoons of unsalted butter. Cover the skillet and cook with med heat until the chicken is done.At this time you can remove the skin if you are watching your weight.
This is a standby of mine. Rice on the side and you have dinner. If you want it a little more juicy you can open a can of chicken stock and pour a little in the skillet.

In a medium bowl, mix all the ingredients together except the chicken, butter, and garlic.
Melt butter and garlic together (microwave is fine). Bread chicken with the butter and garlic mixture, then dip into the breadcrumb mixture. Put on a foil lined cooking sheet.
Any leftover crumbs, sprinkle over top the already breaded chicken. Bake for 1 hour.
