How Do You Know When Sugar Snap Peas Are Ready For Harvesting?

Sugar snap peas are unlike regular snow peas in that you want to pick them after they have plumped up and you can see the individual peas in the pod, but while they are still green. Once they've started to brown on the edges they are overripe and will have a starchy taste because the sugar is breaking down.

If you pick them before the peas develop they are OK but not nearly as tasty.
