I would try Sandra Lee. She has a show on the foodnetwork, called semi-homemade where she takes store prepared foods and makes a dish out of them with other ingredients she has on hand. This would at least get you familiar with basic dishes and bring some level of comfort to you in the kitchen.
You can find her books and magazines on Amazon. Otherwise, I recommend the Better Homes and Gardens New Cookbook. It's been around since the 1930's with modern revisions since.It was my first cookbook.
I also recommend Cooking Light Annual Recipes Cookbook. The recipes can be prepared by a novice, usually healthy and categorized by recipe, menu and even method.
