With leftover fried chicken, I usually remove the skin and most of the coating, then shred the meat and use it in chicken salad, chicken casserole, or chicken sandwiches. If you want to keep the crunchy coat on the chicken, I have added the whole pieces to a variety of different sauces and served over rice or noodles. One of the easiest thing to do is combine a can of cream of mushroom soup and a can of cream of chicken soup in a casserole dish.
Add a cup of milk, and add any extra vegetables that you like. Shred the left over chicken, and add that to the mixture. Cook it in a 350 degree oven, until the top begins to brown.(You can use any two "cream of..." soups that you like, and with the different types to choose from, your recipe can vary every time).
There are so many things to do with leftover chicken. *Add the shredded chicken with "Manwich" for chicken sloppy joes *Add the chicken to a prepared spaghetti sauce and serve over spaghetti or any other pasta that you like. *Add shredded chicken to the green bean casserole recipe (green beans, cream of mushroom soup, milk, and french fried onions and serve over rice.
*Make chicken gumbo *If your family likes stuffing, make a box of Stove Top or something similar and add the chicken to it. Make chicken gravy and some mashed potatoes and your dinner is done. *Use the leftover shredded chicken in Mexican dishes, like tacos, burritos, or enchiladas.
You can mix the chicken with refried beans, spread the mixture on a flat taco, add some diced tomatoes, shredded lettuce, chopped onions and cheese, or whatever you like for some pretty tasty tostados. If nothing else, eat it cold!
