These are the main differences between condensed milk and evapourated milk. Condensed milk has far more sugar in it than evapourated milk has, it has been sweetened by adding a lot of added sugar to it and while it can be great in recipes like Banoffee Pie and Fudge, it could not be considered a particularly healthy form of milk. Evapourated milk has had part of the water content removed by evapouration, so the result is a more concentrated, thicker form of milk than in its natural state, but with no added sweetness. So in effect, condensed milk is evapourated milk, but with added sugar, a rather scary amount at aprox 40 to 45%!
Evapourated milk contains around 7.9% milk fat and condensed milk very slightly higher at around 85%. madehow.com/Volume-6/Evaporated-and-Cond... homecooking.about.com/od/cookingfaqs/f/f...
