I would not. Brie is meant to be warmed before serving - it is a spread. If you take the rind off, when you warm it the cheese is going to melt and run all over the plate, and then get hard.

Brie is to be spread on crackers, or small pieces of bread, etc. You do not cut it into pieces and eat it like you would most cheeses.

Brie is so good. Really - a rich buttery taste. Soften the whole thing - rind and all in the microwave - not melt, but soften, and spread it on some crackers.

To many people the rind is the best part, I like it. If you prefer not to eat it, take a knife, run it under VERY hot water, and it will slice through the cheese like butter, but beware at room temp the cheese is going to turn into a gooey glob, YUM!
