The 'recipe' for Brie can vary, sampling would be best. In the case of double cream and triple cream Brie the ratio of cream to milk is higher than is typical. The result should be a creamier cheese with additional buttery notes.

If you're buying from a retailer than has these cheeses in the case and not simply prepackaged, it is not outrageous to ask for a sample. Then you'll know for yourself, before laying out the extra money. Typically if you've been content with the the product you've been buying you won't get so much wow power that you'll want to switch to the more costly product for casual consumption.

Triple cream Brie also tends to be very soft almost melting on the palate and is generally a special occasion sort of fare. Sources: Opinion .

Technically the difference is the butterfat content of the cheese...(75% vs. 60%) In order for a cheese to be called triple cream the butterfat content must be at least 75%. Double cream cheese only needs to have a butterfat content of 60%. For all practical purposes, the difference is in how the cheese tastes. In general triple cream cheeses are going to be smoother, richer, and more complex with a texture closer to butter (which is 100% butterfat) than a double cream cheese.

In my opinion, it is almost always worth it to pay the extra few bucks for a triple cream. Some of my favorites are: Saint Andre and Pierre Robert ( Both are French "Brie-like cheeses) Cambozola (German "blue" cheese) Both can be purchased at Whole Foods and occasionally at QFC. One last note - serve all triple cream cheeses at room temperature to really bring out the flavor.

Triple cream has thicker cream than double Double and Triple Cream Brie cheeses are usually made with a creamier milk as a base - that is, it contains a greater proportion of cream to milk than is normally used. In some cases, extra cream can be added directly to the milk. This can give a creamier cheese with a more buttery taste.

The difference is fat! Triple cream will have more milkfat in it than double cream Brie. I doubt you'll be able to taste the difference, but you may notice a more creamy texture and even (possibly) a longer lasting taste because the extra fat may cling more to your mouth.

Frankly I'd save my money and go for the double cream. Or even plain old Brie, the texture and taste is still divine! Sources: Me .
