Oh, have I got a good easy one for you! Sauteed Tilapia with LIme 1 to 1-1/3 lb tilapia filets 3 T flour 3 green onions 1 clove garlic 1/2 c dry white wine 1T lime juice 1/2 T butter 1 T olive oil Rinse and pat dry the filets. Dredge lightly in flour, then salt and pepper them.
Chop green onions. Mince garlic into the wine, and add the lime juice and butter (set aside). Heat oil in skillet over med high heat, then cook tilapia about 3 minutes, then turn and keep cooking until it flakes.
Transfer to an ovenproof platter and keep warm in the oven (200 deg) while preparing your sauce. Add the wine mixture to the pan, scraping any brown bits, and cook until reduced by half, about 2-3 minutes. Add the green onions and heat for another minute.
Pour sauce on fish and serve, garnished with additional lime wedges. It's one of my favorite fishes, too, and one of the few that I really don't mind that it's been frozen! Sources: Wish I knew, but I've had that recipe for a long time!

My favorite tilapia recipe... I've tried other ways of making tilapia but always go back to this recipe. 1 to 1 1/2 lbs tilapia Mix together the following... 1/4 cup mayonnaise 2 tbl steak sauce 1 tsp dill weed 2 tbl parmasen cheese 1 tbl lemon juice Spread mixture on top of the fillets. Cook in a preheated oven at 400 degrees for about 10 minutes until sauce gets carmelized and fish flakes.

You might want to try breading the fish with Panko Bread Crumbs (Japanese Bread Crumbs) for a different variation on that. I like to mix the crumbs with dried herbs and parmesan cheese. Broiled This is my newest favorite and quick way I fix them. I spray the broiler pan with "Pam" and then cut a garlic clove and rub it on the pan. I put the fillets on the pan and squeeze a bit of lemon juice on them, lightly sprinkle them with garlic powder and onion powder, then top with walnuts and parmesan.
I put the walnuts and grated parmesan in my food processer to make a chopped "topping" and then cover the fillets with a fine layer. I broil them for about 10 minutes on low. DELICIOUS!
I varied this once and used ginger/garlic paste instead of using the garlic and onion powder and that was pretty yummy, too, but the paste is rather expensive for a small jar.
