I think you will be more bothered by rabbits - so you need to put up a fence. Japanese beetles are a problem in some areas, but I have found that planting a few marigolds near the garden keeps the beetles off your veggies.

My parents typically have cucumbers, lettuce, cabbage, onions, beans, peas, beets, carrots, corn, squash (winter and summer varieties) potatoes, and a few odd veggies. (besides the tomatoes and strawberries mentioned) keep in mind that your growing season will dictate what you can successfully grow.

My mother often makes "garden soup" with the culls, and freezes it. We still have potatoes, winter squash, and carrots stored; and usually would have onions, but we didn't have a long enough season for them to mature. We also lost most of the corn crop; although we don't usually get enough surplus of that to specifically store.

Most vegetables have their own natural predators - my mother sticks mostly to slug bait, barriers to protect the leaf vegetables, and the philosophy that they don't eat much. But they now have a 14 foot high elk fence around the garden, and the blueberries and strawberries have netting to keep the birds out of them.
