The difference in bread flour is gluten, which makes it hold the yeast bubbles better. Soy flour has no gluten. You CAN buy wheat gluten to mix in; which is commonly done when making whole-grain breads.

Not the same protein structure as far as I know...I browsed a bit to try to find out if there was a protein that could substitute for gluten in breadmaking, and apparently nobody has found one with the same properties. If you're just looking to make bread without buying bread flour, regular white bleached or unbleached flour will make adequate bread. I use it in my bread machine and it does just fine.

It might be a tiny bit denser, but otherwise, it should turn out just fine. If you use the whole wheat setting it would probably compensate if the regular setting gets it too dense for your liking. My mother wore out her first bread machine in about 5 years - sent it in for repair, and I still have it in the attic.

Just add vital wheat gluten. It's available in most supermarkets and definitely whole foods. Gluten provides yeast bread's structure, and helps it rise and stay risen.
Vital wheat gluten provides the extra gluten heavier, whole-grain loaves need to rise their highest. Excellent work by TLW. One addendum: nothing is quite like gluten, but there are some gluten substitutes. These are mostly added to non-wheat flours (like rice) to give it a texture at least a little more like bread and less like hockey pucks.
The best substitute I've found is xanthan gum. It's available at health food stores. It's a poor substitute for gluten, but it's better than nothing.
There's also potato flour, tapioca flour, and guar gum, along with some commercial products marketed as "gluten substitutes". Soy flour does add protein, but it doesn't mimic gluten very well. If you're using AP flour then there's no point in using these, since the only reason to use them is if you're gluten intolerant.
And you're unlikely to have xanthan gum around the house. In general, either get some bread flour or just use AP flour (and add gluten if you have it). A bit of extra kneading helps develop the gluten better, but nothing is quite like real bread flour.
