Egg-white omelets are a "standard" "diet" meal. If you don't want to separate the yolks from the whites you can buy Egg Beaters (or a store brand) "whites only". One recipe is to add chopped red or green peppers, mushrooms, and onions for a vegetable omelet.
I would use Egg Beaters. They taste pretty good and scramble with about the same consistency as whole eggs. To make them closer to the real thing, add a real whole egg to one container of Egg Beaters with all the other ingredients.
It's a dietary myth that eggs (egg yolks) are bad for you. Cholesterol and all that. The truth is, whole eggs are one of the best foods.
That being said, you can get a kitchen utensil that will separate the yolks and whites. Then you can make a yucky whites only omelet just as you would a good one.
I don't know if you can make an omelet without the yolk. If you take the yolk out the egg and add just add the rest of the egg, there would just be the white part of the egg. I am guessing that you can add more eggs without the yolk and your meats, or what ever else that you want to use to make you an good old egg omelet.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
